LITTLE BRANCH bistro is the concept of chef and owner Wayne Metcalf his concept is 100% flavour with speedy service . Wayne started his career in Dorset Southern England where his love for the sea was inspired. He decided to open one of the first of many bistro pubs in Weymouth and was recognized as the youngest ever publican in the UK .
Years later at a crossroads in his life he wanted to expand his culinary talents and having learnt all there is about preparing fish it made sense to sell up and travel the world.
Some of his more full flavoured dishes will be unleashed this February 14th with his team - sous chef Matthew shone who also has an impressive portfolio and has worked under well respected uk celebrity chef Richard Phillips and local commis chef Mark Brennan worldly travelled and trained in the RTC/GMIT school for professional culinary arts. On the night Wayne's meaty monkfish with a lobster Bisque is second to none.
An Irish twist on it why not add some creamy garlic scented potatoes with the caramelized carrots and you will be in happy belly heaven. His starters of coquilles St Jacques - scallops with a white wine sauce and duchess potato's is sure to please and melts in your mouth. Little Branch Bistro is sure to blow you away this coming year . We will be hosting several bookings-only dinner parties with music and five star guest chef's throughout the coming years. As a dedicated chef for the past ten years three of which were spent providing Sligo town with real homemade comfort food from Quayside where Wayne and his team have chosen to keep there already popular all day breakfast/ carvery, comfort food with homemade burgers , like his beastly chicken fillet burger or for the adventurer in you the black and blue burger made with a touch of stilton blue cheese and a special blend of seasoned burger meat which he would personally recommend because it is 100 % homemade and flavourful come on in and Taste for yourself you will not be disappointed.
